This is probably my favorite chocolate dessert. One of the secrets of which is the chocolate-caramel ganache according to the recipe of a virtuoso confectioner and chocolatier from Alsace – Christoph Felder. Just imagine the chocolate flavor with hints of caramel and a slightly perceptible salty aftertaste. Be sure to save the recipe for this ganache. I’m sure culinary enthusiasts like me will appreciate it. I bake the biscuit the night before, and make the cream and ganache the next day.
